This sexy mamma and that Sexy Mamma…

It takes a lot to impress me. This may be because I am old, cynical and jaded, it may be because I have very high standards or perhaps a bit of both, or maybe I’m just picky and difficult, I’ll let others decide. But just occasionally something comes along that surprises and delights and reminds you why it’s good to be alive. And it is. And Sexy Mamma Love Spaghetti is one of those things. Edin’s kitchen, all boho and ladies that lunch

How come I haven’t discovered this gem before now? After a wasted morning waiting for someone I was due to interview who didn’t bother to turn up (he and his business shall remain nameless for now as I am not a bitter person) I meandered back through Nottingham’s Bohemian quarter – Hockley – and stumbled upon Edin’s Kitchen. Having heard good things about it, I decided on an opportunistic lunch. Quietly unassuming on the outside, Edin’s Kitchen is one of those hidden gems you stumble across and, once inside, feel as if you’ve just become part of a little secret. Anyone watch “Goodnight Sweetheart”…where the chap walks through a wall and finds himself in wartime London? Well walking into Edin’s felt a bit like walking into a Parisienne back-street cafe that only the locals know, and then feeling properly pleased with yourself. Manhattan-style Clam Chowder, tomatoes, no cream..

So reminiscing about last summer’s trip to New York and a lovely chowder at Pier A, I felt inspired to rustle up a Manhattan Style Chowder. To me a Chowder always has milk or cream in it but in New York it was all about the tomatoes. It seems the addition of tomatoes instead of cream is not historically without its own controversy… apparently by 1939 it had become so contentious that one State Representative, a certain Cleveland Sleepe, introduced a Bill in the legislature attempting to make the addition of tomatoes illegal. However, after a panel of Chowder connoisseurs at a competition in Portland declared the traditional New England Chowder the epicurean champion, the Bill did not pass and the Free World is still free to add tomatoes to its chowder, and so am I. Delicious.

LohiKeitto – that’s Finnish for a traditional, creamy, buttery, indulgent Salmon Soup.

To me, the best soup ever. As summer turned to Autumn overnight last week, as school started and there was a distinct nip in the air, I needed something comforting to herald the new season. I used to live in Finland and this soup was taught to me by an elderly Finnish lady who grew up in Lapland in the very north of the country, where calories are properly necessary to keep out the cold. This has them in abundance but don’t let that put you off. Just promise yourself an extra long run next week.     Traditional Finnish Salmon Soup (and home-made bread) (as usual, my measurements are a guide only – add to taste) 200g onions, 800g waxy potatoes, 150g Butter, 2 litres of Fish Stock, 6dl of double cream (I acutally used a bit more than this, well quite a bit more, as I love it), sea salt, a tiny pinch of all-spice, 4/5 Bay leaves, depending on size, 500g skinless and boneless salmon, loads of Fresh Dill to taste Method Simmer …
